    Recipe for the Order of Canada Investiture

    Pumpkin squares, espresso and white chocolatePumpkin squares,
    espresso and white chocolate

    Pumpkin filling

    • 500 ml (2 cups) cooked pumpkin puree
    • 300 g (10 oz) evaporate milk
    • 60 g (2 oz) coffee extract or espresso
    • 2 egg
    • 190 ml (3/4 cup) brown sugar
    • 15 ml (1 table spoon) ground cinnamon
    • 15 ml (1 table spoon) ground ginger
    • 15 ml (1 table spoon) ground nutmeg
    • 1 pinch of ground clove

    Graham cookie crumbs base

    • 375 ml (1.5 cup) Graham cookie crumbs
    • 125 ml (0.5 cup) melted butter

    Garnish

    • 60 g (2 oz) grated white chocolate
    • 60 g (2 oz) crumble
    • 60 g (2 oz) roasted pumpkin seeds

    Crumble

    • 30 g (1 oz) flour
    • 30 g (1 oz) sugar
    • 30 g (1 oz) butter

    Preparation

    1. Mix the Graham cookie crumbs with the softened butter and cover the bottom from a tart mould with the size of 30 cm by 30 cm (12 inches per 12 inches) with preparation.
    2. Combine the brown sugar, cinnamon, ginger, nutmeg and cloves, and then add the pumpkin puree, evaporate milk, coffee extract and the eggs. Mix the filling.
    3. Add the filling in tart mould and cook in a 350 Fahrenheit oven for about 45 minutes. Cool down
    4. Combine the flour, sugar and butter, bake at 350 Fahrenheit for 30 minutes
    5. Cut the tart in square and garnish with crumble, grated white chocolate and grilled pumpkin seeds
    6. For the crumble preparation, combine the flour with sugar, then the butter in bowl
    7. Mix ingredients with the fingers to obtain sandy dough.
